Instructions

  1. In a large bowl, mix together the flour, sugar, and salt.
  2. Gradually add the plant milk, melted coconut oil, apple cider vinegar, and vanilla extract, whisking until smooth. Let the batter rest for 30 minutes to allow it to thicken slightly.
  3. Meanwhile, prepare the Chia Seed Caviar: Combine chia seeds, almond milk, sugar, vanilla extract, lemon zest, lemon juice, and a pinch of salt in a small bowl. Mix well, then cover and refrigerate for at least 20 minutes, or until the chia seeds have absorbed the liquid and formed a caviar like consistency.
  4. Heat a non stick pan over medium heat. Pour 1/4 cup of batter onto the pan, cooking each blini until bubbles appear on the surface and the edges are golden brown. Flip and cook the other side until golden brown. Repeat with the remaining batter.
