Instructions

  2. In another shallow dish, place the beaten egg and flour separately.
  3. Dredge each shrimp in flour, then egg, and finally press into the panko mixture to coat evenly.
  4. Heat about 1 inch of vegetable oil in a deep frying pan or skillet over medium high heat.
  5. Fry the coated shrimp until golden brown, about 2 3 minutes per side. Remove and place on paper towels to drain.
  6. In a separate bowl, combine mango, red onion, jalapeno, cilantro, and lime juice. Season with salt and pepper to taste. Set aside.
  7. Serve the Firecracker Shrimp hot with a generous scoop of spicy mango salsa on top.
