Ingredients

  • 8 small corn tortillas 1 lb boneless, skinless chicken breasts 3 tbsp olive oil 1/4 cup fresh cilantro, finely chopped 1/4 cup green onions, thinly sliced 1/2 cup crumbled feta cheese 1 lime, cut into wedges

Instructions

  1. In a large bowl, whisk together the olive oil, 2 tbsp of lime juice, chipotle chili powder, smoked paprika, garlic powder, salt, and black pepper until smooth. Add the chicken breasts and marinate for at least 30 minutes or up to overnight.
  2. Preheat a grill or grill pan over medium high heat. Grill the marinated chicken until fully cooked and slightly charred on both sides, approximately 6 8 minutes per side. Allow the chicken to rest for a few minutes before thinly slicing it.
  3. Warm the corn tortillas on the grill or in a dry pan for about 15 seconds per side.
  4. Assemble the tacos by layering sliced chicken, cilantro, green onions, and feta cheese onto each warmed tortilla. Serve with lime wedges for squeezing over the top.

Chef’s Insight

To infuse even more smoke flavor into the marinade, try soaking wood chips in water for 30 minutes before adding them to the grill alongside your chicken.

Notes
