Ingredients
- 8 oz dark chocolate (vegan)
- 1 cup unsweetened almond milk
- 2 tbsp coconut oil
- 1 tsp Cajun seasoning blend
- 4 ripe peaches, sliced and pitted
- 1/2 cup sugar
- 1/4 cup water
- 1 cup pecan halves
- 1/4 cup vegan butter
Instructions
- Melt chocolate and coconut oil in a double boiler over low heat. Stir in almond milk and Cajun seasoning blend, then whisk until smooth. Chill the chocolate mixture in the refrigerator for 30 minutes or until it thickens slightly. Beat the chilled chocolate mixture with an electric mixer until light and fluffy. In a separate saucepan, caramelize the peaches by melting sugar and water together over medium heat. Add pecan halves to another saucepan and toast lightly in vegan butter until fragrant. Assemble the dessert by layering chocolate mousse, caramelized peaches, and toasted pecans in a glass or bowl.

To create the perfect Cajun blend, combine paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, basil, salt, and black pepper.
