Ingredients
4 slices of thick
cut sourdough bread
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup diced tomatoes
1/4 cup thinly sliced pickles
1/4 cup arugula
2 tablespoons unsalted butter, softened
Salt and pepper to taste
Instructions
Preheat a large skillet or griddle over medium heat.
Spread a thin layer of butter on one side of each slice of bread.
In a small bowl, combine the shredded cheddar cheese, mozzarella cheese, tomatoes, pickles, and arugula. Season with salt and pepper to taste.
Place two slices of bread, buttered sides together, on the preheated skillet or griddle. Cook for 2 3 minutes, until golden brown.
Carefully flip the sandwich using a spatula, and quickly spread the cheese mixture evenly over one of the now uncooked sides of the sandwich.
Top with the second slice of bread, buttered side down. Cook for another 2 3 minutes, or until golden brown and the cheese is melted.
Remove from heat and let rest for a minute before slicing.
