Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a small bowl, mix together salt, black pepper, smoked paprika, ground cumin, and ground turmeric.
  3. Rub the seasoning mixture all over the pork shoulder.
  4. Place the pork in a roasting pan and roast for 1 hour and 30 minutes or until the internal temperature reaches 165°F (75°C).
  5. Remove the pork from the oven, cover with aluminum foil, and let it rest for 15 minutes.
  6. In a large saucepan, heat olive oil over medium heat. Add onions and garlic, cook until translucent.
  7. Stir in turmeric, cumin, cinnamon, and parsley, followed by cauliflower rice. Cook for 5 minutes, stirring occasionally.
  8. Pour chicken broth into the saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 7 10 minutes or until the rice is tender.
  9. To prepare the cucumber salad, in a large bowl, combine sliced cucumber, cherry tomatoes, red onion, red wine vinegar, olive oil, salt, and pepper. Toss to mix well.
  10. Slice the rested pork and serve it alongside the cauliflower rice and cucumber salad.
