Ingredients

  • 1. 2 lbs chicken wings 2. 1 cup coconut milk 3. 1/4 cup red curry paste 4. 1/4 cup soy sauce 5. 1/4 cup honey 6. 1/4 cup rice vinegar 7. 1 tbsp sesame oil 8. 2 mangoes, peeled and sliced 9. 1 small red onion, thinly sliced 10. 1/2 cup fresh cilantro leaves, chopped

Instructions

  1. In a large bowl, whisk together coconut milk, curry paste, soy sauce, honey, rice vinegar, and sesame oil to create the marinade.
  2. Add chicken wings to the marinade, making sure they are fully submerged. Cover and refrigerate for at least 1 hour, or up to overnight.
  3. Preheat grill to medium high heat. Grill chicken wings until cooked through, about 15 20 minutes, turning occasionally and brushing with remaining marinade. Remove from grill and let rest for a few minutes.
  4. In a large bowl, combine mango slices, red onion, and cilantro to create the mango slaw.
