  • 2 beef patties (80% lean) 4 slices cheddar cheese 4 hamburger buns 1 large white onion, thinly sliced 4 slices thick

Instructions

  1. In a medium bowl, whisk together the flour, breadcrumbs, salt, and pepper. Set aside.
  2. Prepare your smoker or grill for indirect cooking at 350°F (175°C).
  3. In a shallow dish, beat the egg and milk together.
  4. Dip onion rings into the egg mixture, then dredge in the dry mixture until well coated.
  5. Wrap bacon around onion rings, overlapping if necessary. Secure with toothpicks.
  6. Smoke or grill onions wrapped in bacon for 10 minutes, until bacon is cooked through and onions are tender. Set aside.
  7. Season beef patties generously with salt and pepper. Grill over direct heat for 3 4 minutes per side for medium doneness. Top each patty with a slice of cheddar cheese during the last minute of cooking.
  8. Split buns, add patties, bacon onion rings, and top with barbecue sauce. Serve immediately.
