Instructions

  1. Lay out two slices of bread on a cutting board. Spread one side of each slice with butter.
  2. Place two slices of cheddar cheese and two slices of Monterey Jack cheese between the two buttered sides of the bread, creating a sandwich. Repeat for all four sandwiches.
  3. In a large skillet or griddle, heat 1 tablespoon of olive oil over medium low heat.
  4. Add one sandwich to the pan and cook until golden brown, about 2 3 minutes per side.
  5. Remove the sandwich from the pan and place on a plate. Top with a generous portion of kimchi and sliced red onion. Season with salt and pepper to taste.
