Ingredients
- 2 corn on the cob, shucked
- 1/4 cup mayonnaise
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh lime juice
- 1/4 cup crumbled cotija cheese
- 2 tablespoons finely chopped fresh cilantro
Instructions
- Preheat a grill or grill pan over medium high heat.
- In a small bowl, combine the mayonnaise, chili powder, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Mix well to create a spicy seasoning blend.
- Brush the corn cobs with some of the prepared spice mixture, making sure to coat them evenly.
- Place the seasoned corn on the grill or grill pan and cook for 8 10 minutes, turning occasionally, until the corn is tender and slightly charred.
- Remove the corn from the heat and let it cool for a few minutes.
- In a small bowl, combine the lime juice with the remaining spice mixture to create a zesty dressing.
- Brush the corn with the lime spice dressing and sprinkle with cotija cheese and cilantro.
