Instructions

  1. In a large saucepan or Dutch oven, combine the pork shoulder chunks with orange juice, tequila, apple cider vinegar, chili powder, smoked paprika, ground cumin, ground coriander, salt, and black pepper. Stir well to coat the pork evenly with the spices.
  2. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for 1 hour and 45 minutes or until the pork is tender and easily shreds with a fork.
  3. Preheat your grill to medium high heat, and transfer the cooked pork to the grill grates. Cook the pork for 3 4 minutes per side, or until it's slightly charred and crispy. Remove from the grill and let it rest for a few minutes.
  4. Meanwhile, warm the corn tortillas on the grill for about 30 seconds per side until they're just slightly softened.
  5. Shred the cooked pork into bite sized pieces and return it to the sauce, stirring well to combine.
