Ingredients
- 2 lbs carne asada or chicken fajita meat, thinly sliced
- 12 small corn tortillas
- 1 recipe Smoky Guacamole (see below)
- 1 cup shredded lettuce
- 1 cup crumbled cotija cheese
- 1 lime, cut into wedges
- Fresh cilantro leaves Smoky Guacamole:
- 3 ripe avocados, pitted and scooped out
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, seeds removed and finely chopped (optional)
- Juice of 1 lime
- Salt and pepper to taste
- 1 tbsp smoked paprika
Instructions
- Prepare the Smoky Guacamole by combining all ingredients in a medium bowl. Mash with a fork or potato masher until smooth and season to taste. Set aside.
- Heat a grill or grill pan over medium high heat. Sear meat for 3 4 minutes per side, until cooked through. Remove from heat and let rest for a few minutes.
- Warm tortillas on the grill for about 10 seconds each, turning frequently to prevent burning. Keep warm in a clean kitchen towel.
- Assemble tacos: spread Smoky Guacamole on warmed tortillas, top with seared meat, shredded lettuce, crumbled cotija cheese, a squeeze of lime juice, and fresh cilantro leaves.
- Serve immediately.
