6 ears of fresh corn, husks removed
2 tbsp olive oil
1/2 cup sour cream or mayonnaise
1/4 cup crumbled Cotija cheese
1/4 cup chopped cilantro
1 chipotle pepper in adobo sauce, minced (optional)
Salt and pepper, to taste
Juice of 1 lime
Instructions
Preheat your grill or stovetop griddle to medium high heat.
Brush the corn with olive oil and season with salt and pepper.
Grill the corn for 8 10 minutes, turning frequently, until slightly charred and tender.
In a small bowl, mix together sour cream or mayonnaise, Cotija cheese, chopped cilantro, minced chipotle pepper (if using), lime juice, salt, and pepper to taste. This is your spicy crema sauce.
Remove the corn from the grill and immediately slather each ear with the spicy crema sauce.
Sprinkle additional Cotija cheese on top for an extra burst of flavor.
