Ingredients

  • 1. 2 lbs tri
  • tip steak 2. 1/4 cup yellow mustard 3. 1/4 cup apple cider vinegar 4. 1/4 cup olive oil 5. 1/4 cup brown sugar 6. 1 tablespoon paprika 7. 1 teaspoon garlic powder 8. 1 teaspoon onion powder 9. 1 teaspoon chili powder 10. 1 teaspoon black pepper 11. 1 teaspoon salt 12. 1/4 cup honey 13. 1/4 cup ketchup 14. 1 tablespoon Worcestershire sauce 15. 1 tablespoon soy sauce

Instructions

  1. In a large bowl, combine mustard, vinegar, olive oil, brown sugar, paprika, garlic powder, onion powder, chili powder, black pepper, and salt. Mix well to create a marinade.
  2. Place the tri tip steak in a large resealable plastic bag or a shallow dish and pour the marinade over it. Ensure that the meat is evenly coated with the mixture.
  3. Marinate the steak for at least 4 hours, preferably overnight, in the refrigerator.
  4. Preheat your grill to medium high heat (around 350°F). Remove the marinated steak from the refrigerator and let it come to room temperature for about 15 minutes before grilling.
  5. In a small saucepan, combine honey, ketchup, Worcestershire sauce, and soy sauce. Cook over medium heat until the mixture thickens, stirring occasionally. Set aside.
  6. Grill the tri tip steak for about 5 minutes per side or until it reaches your desired level of doneness. Baste the steak with the sweet honey glaze during the last few minutes of grilling to create a beautiful caramelized crust.
  7. Remove the steak from the grill and let it rest for at least 5 minutes before slicing against the grain. Serve immediately.

Chef’s Insight

To enhance the smoky flavor, soak wood chips in water for 30 minutes before adding them to your grill.
