Ingredients

Instructions

  2. Place chicken in a shallow dish and evenly coat with half of the jerk seasoning mixture, ensuring each piece is well covered. Let marinate in the refrigerator for 30 minutes to 2 hours.
  3. While the chicken is marinating, preheat your grill or grill pan to medium high heat.
  4. Thread chicken and pineapple chunks alternately onto skewers, finishing with a piece of chicken.
  5. Grill skewers for about 6 minutes per side, brushing occasionally with the remaining jerk seasoning mixture, until chicken is cooked through and has an internal temperature of at least 165°F (74°C).
  6. Remove from grill and let rest for a minute before serving. Garnish with cilantro leaves.
