Ingredients

  • 20 oz russet potatoes, cut into 1/2
  • inch wedges 2 cups cooked pulled pork 8 oz sharp cheddar cheese, shredded 2 cups your favorite BBQ sauce (homemade or store
  • bought) 1 tbsp vegetable oil Salt and pepper to taste

Instructions

  1. Preheat a deep fryer or large pot of oil to 350°F (175°C). Fry the potatoes in batches until golden brown, approximately 5 minutes per batch. Remove and drain on paper towels. Season with salt and pepper.
  2. In a skillet over medium heat, warm up the BBQ sauce. Add pulled pork and stir to coat. Cook for 3 4 minutes or until heated through.
  3. Arrange half of the fries in a large serving dish or on individual plates. Top with half of the BBQ pork mixture and 1/3 of the cheese curds. Repeat with the remaining fries, BBQ pork, and cheese curds.
  4. Place the serving dish in the oven at 350°F (175°C) for 5 minutes or until the cheese is fully melted and bubbly.
