Ingredients

  • 4 large ears of corn, shucked and cut off the cob
  • 1 cup butter, melted
  • 1 tablespoon sugar
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1 cup grated cotija cheese
  • 8 cups popped popcorn, divided use

Instructions

  1. In a large bowl, combine the melted butter, sugar, chili powder, salt, black pepper, cumin, and paprika. Mix until well combined.
  2. Preheat your grill to medium heat. Brush the corn with the butter mixture, then season with salt and pepper to taste.
  3. Grill the corn on all sides until tender and slightly charred, about 6 8 minutes total. Remove from the grill and let cool for a few minutes.
  4. Cut the kernels off the cob and place them in a large bowl. Add half of the popped popcorn and toss with the cotija cheese, mixing well.
  5. Spoon the corn mixture into 8 muffin cups or small ramekins, filling them to the brim. Sprinkle the remaining popped popcorn over the top of each cup for added crunch and texture.
  6. Serve warm and enjoy!
