1 cup uncooked quinoa (rinsed) 2 cups water 1/2 teaspoon salt, divided 4 ounces smoked salmon 2 cups fresh spinach 1/2 cup crumbled feta cheese 2 tablespoons fresh dill, chopped 1 tablespoon fresh oregano, chopped Black pepper, to taste Lemon wedges, for garnish
Instructions
In a medium saucepan, combine quinoa and water. Bring to a boil over high heat, then reduce heat to low and cover. Simmer for 15 minutes or until quinoa is cooked and all water is absorbed. Fluff with a fork and let cool slightly.
Season the cooked quinoa with half of the salt and fluff with a fork.
Gently mix in smoked salmon, spinach, feta cheese, dill, oregano, and remaining salt to taste. Season with black pepper as desired.
