  • 6 slices thick
  • cut bacon, diced
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tbsp molasses
  • 1/2 tsp smoked paprika
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup all
  • purpose flour
  • 2 cups shredded sharp cheddar cheese
  • 2 tsp baking powder
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter, cold and cubed

Instructions

  1. In a large skillet over medium heat, cook the diced bacon until crispy. Remove from heat and set aside. Reserve 2 tbsp of rendered bacon fat and add it back to the pan.
  2. Add onion and garlic to the bacon fat in the skillet and sauté until softened. Stir in vinegar, brown sugar, ketchup, molasses, smoked paprika, red pepper flakes (if using), salt, and pepper. Cook for 5 minutes or until thickened.
  3. Add cooked bacon back into the skillet and stir well. Set aside to cool slightly.
  4. In a separate large bowl, whisk together flour, cheddar cheese, baking powder, and a pinch of salt. Cut in cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs. Stir in milk until just combined.
  5. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and drop spoonfuls of dough onto it, spaced 2 inches apart.
  6. Bake biscuits for 15 20 minutes or until golden brown. Remove from the oven and let them cool slightly.
  7. Slice each biscuit in half and spread a generous layer of bacon jam on the bottom half of each biscuit. Top with the other half and serve warm.
