Shellfish (shrimp)
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 cups fresh pineapple, cut into 1
- inch chunks
- 1 ripe mango, thinly sliced
- 1 small red onion, thinly sliced
- 1 cup red cabbage, shredded
- 1/2 cup cilantro, chopped
- 1/4 cup lime juice
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon chipotle powder
- Salt and pepper to taste
Instructions
- Preheat your grill or grill pan over medium high heat.
- In a large bowl, toss shrimp with lime juice, olive oil, smoked paprika, chipotle powder, salt, and pepper. Set aside.
- Thread shrimp and pineapple onto skewers, alternating between the two. Grill for 2 3 minutes per side or until shrimp is pink and cooked through.
- In a separate bowl, combine mango, red onion, red cabbage, and cilantro. Toss with lime juice, salt, and pepper to taste.
- Serve grilled shrimp skewers with mango slaw on the side for a complete meal.

Notes
