  • 2 lbs beef brisket, cut into 4 equal portions
  • 1/4 cup Smoky Carolina BBQ Rub (see recipe below)
  • 4 brioche buns, split and toasted

  • 1 cup homemade coleslaw or your favorite store

Instructions

  1. Preheat a smoker or grill to 250°F (120°C).
  2. Generously coat the brisket portions with the Smoky Carolina BBQ Rub, pressing it into the meat.
  3. Place the brisket on the smoker or grill, and smoke for 6 hours or until tender and reaching an internal temperature of 195°F (90°C).
  4. Remove the brisket from the heat and let rest for 20 minutes before slicing against the grain into thin strips.
  5. Assemble the burgers: place a portion of smoked brisket on the bottom half of each brioche bun, top with cheddar cheese, and then add a generous scoop of coleslaw. Place the top half of the bun to complete the burger.
