  • 2 tbsp olive oil For the Marinade:
  • 1/4 cup lime juice
  • 1/3 cup soy sauce

  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt For the Smoky Guacamole:
  • 2 ripe avocados, halved and pitted

  • 1 jalapeño, finely chopped
  • 1/4 cup chopped cilantro
  • 1 tbsp lime juice For the Zesty Lime Crema:
  • 1/2 cup sour cream
  • 1/4 cup lime juice
  • 1 clove garlic, minced
  • Salt and pepper to taste Tortillas and garnishes of your choice.

Instructions

  1. In a large bowl, combine chicken with the marinade ingredients. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  2. While the chicken is marinating, prepare the smoky guacamole by mashing avocados with tomatoes, jalapeño, cilantro, and lime juice. Season to taste with salt and pepper. Cover and set aside.
  3. In a separate bowl, whisk together sour cream, lime juice, garlic, salt, and pepper for the zesty lime crema. Cover and refrigerate until ready to serve.
  4. Preheat your grill or grill pan to medium high heat. Grill the marinated chicken and peppers until cooked through and slightly charred. Remove from heat and let rest for a few minutes before slicing.
  5. Warm the tortillas on the grill or in the microwave.
  6. Assemble your fajita feast by placing grilled chicken, peppers, smoky guacamole, and zesty lime crema in each tortilla. Serve with desired garnishes.

Chef’s Insight

To add depth to the marinade, try adding a splash of tequila or a pinch of ground ancho chili powder.

Notes

For an extra smoky flavor, consider using hickory or mesquite wood chips on the grill.
