  • 2 tbsp chipotle chili powder

  • 8 corn tortillas
  • 1 avocado, sliced
  • 1 cup shredded cabbage
  • 1 lime, cut into wedges

Instructions

  1. In a large bowl, combine shrimp, olive oil, minced garlic, chipotle chili powder, smoked paprika, ground cumin, salt, and pepper. Toss until well coated.
  2. Preheat a grill or grill pan over medium high heat. Cook shrimp for 3 4 minutes per side, or until cooked through and slightly charred. Remove from heat and set aside.
  3. Warm corn tortillas on the grill for about 10 seconds on each side or until slightly charred.
  4. Assemble tacos by layering shrimp, avocado slices, cabbage, and a squeeze of lime juice. Garnish with fresh cilantro leaves.
