Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 3 bell peppers (red, yellow, and green), thinly sliced
  • 1 medium white onion, thinly sliced
  • 8 large flour tortillas

  • 2 limes, cut into wedges
  • 1 small red onion, finely diced
  • Fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Season the sliced beef with salt and pepper. Heat 1 tbsp oil in a large skillet over high heat. Add the seasoned beef and cook until browned, then transfer to a plate. Set aside.
  2. In the same skillet, add the remaining 1 tbsp oil and sauté the bell peppers and white onion until tender but still crisp. Return the cooked beef to the pan and toss to combine.
  3. Warm the tortillas on a griddle or in the microwave for about 20 seconds each. Top with the seasoned meat mixture, a squeeze of lime juice, diced red onion, and chopped cilantro. Serve immediately.
