Ingredients

  • 24 chicken wings, tips removed and split at joint 1 cup (240ml) Buffalo
  • style hot sauce 6 tbsp (90ml) unsalted butter 2 tbsp (30ml) soy sauce 2 tbsp (30ml) honey 1 tbsp (15ml) apple cider vinegar 1 tsp (5g) garlic powder 1 tsp (5g) smoked paprika 1/2 tsp (2.5g) cayenne pepper Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine hot sauce, butter, soy sauce, honey, apple cider vinegar, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Whisk until smooth.
  2. Add the chicken wings to the sauce mixture and toss well to coat evenly. Cover and refrigerate for at least 1 hour or up to overnight.
  3. Preheat an outdoor grill or stovetop grill pan over medium high heat. Remove the wings from the marinade, allowing excess to drip off, and place them on the grill. Cook for about 5 minutes per side or until cooked through and slightly charred.
  4. Place the cooked wings in a large bowl and toss with half of the remaining sauce. Serve immediately with the remaining sauce on the side for extra heat.

Chef’s Insight

To mimic the sizzle and aroma of a festival, grill the wings over an open flame or use a stovetop grill pan to capture that authentic charred flavor.

Notes

For an extra smoky flavor, use mesquite wood chips when grilling outdoors.
