Instructions

  1. In a large ziplock bag, combine the beef flank steak, lime juice, olive oil, salt, and pepper. Seal and marinate for at least 30 minutes, or up to 2 hours.
  2. Preheat an outdoor grill or grill pan to medium high heat. Remove the steak from the marinade, allowing any excess liquid to drip off. Grill the steak for 5 6 minutes per side or until desired doneness is reached. Let rest for 5 minutes before thinly slicing against the grain.
  3. Warm the corn tortillas on the grill for 20 30 seconds per side, or in a dry skillet over medium heat.
  4. Assemble tacos by placing a few slices of steak, a dollop of salsa, a sprinkle of cheese, and avocado slices on each tortilla. Top with fresh cilantro leaves and a squeeze of lime. Serve immediately.
