Instructions

  1. In a large heavy bottomed pot, heat the vegetable oil to 350°F (175°C).
  2. In a large bowl, combine the buttermilk and chicken wings or drumettes, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or up to overnight.
  3. In another large bowl, whisk together the flour, Firecracker Seasoning, paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt.
  4. Remove the chicken from the buttermilk mixture, letting the excess drip off. Then dredge each piece in the seasoned flour mixture, shaking off any excess.
  5. Carefully lower the coated chicken pieces into the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for 7 8 minutes or until golden brown and cooked through, turning occasionally. Remove with a slotted spoon and place on a paper towel lined plate to drain.
  6. Repeat with the remaining chicken pieces, reheating oil as needed between batches.
