  • 6 pounds pork spare ribs
  • 1 cup Memphis
  • style BBQ dry rub (paprika, brown sugar, salt, garlic powder, black pepper, cayenne pepper, onion powder, mustard powder)
  • 2 cups BBQ sauce (tomato paste, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, paprika, chili powder, garlic powder, onion powder, liquid smoke)
  • 6 ears corn, shucked and cut into 1

  • 8 ounces cream cheese, cubed
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste

Instructions

  1. Coat the ribs evenly with the dry rub, then let them rest at room temperature for 30 minutes.
  2. Preheat the grill to medium heat (350°F). Grill the ribs, meat side down, for 2 hours, turning every hour and basting with BBQ sauce during the last hour of cooking.
  3. In a large pot, combine the corn, cream cheese, butter, salt, and pepper. Cook over medium heat until the cream cheese melts and coats the corn.
  4. Serve the ribs alongside the creamy cheesy corn. Enjoy!
