  • 4 small flour tortillas

Instructions

  1. In a large bowl, whisk together lime juice, garlic, cumin, paprika, chili powder, salt, and pepper to make the marinade.
  2. Slice the chicken breasts into thin strips and add them to the marinade. Toss to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Slice the bell pepper and onion into thin strips. Set aside.
  4. Preheat a grill or grill pan over medium high heat. Remove chicken from marinade, letting excess liquid drip off.
  5. Grill the marinated chicken until cooked through, about 3 4 minutes per side. Transfer to a cutting board and let rest for 5 minutes before slicing into thin strips.
  6. In a separate pan or on the grill, sauté the bell pepper and onion strips until tender and slightly charred. Season with salt and pepper.
  7. Warm flour tortillas on the grill or in a pan for about 30 seconds per side.
  8. Assemble fajitas by layering chicken, sautéed vegetables, and desired toppings onto warm tortillas. Fold in half and serve immediately.
