Instructions

  2. Soak applewood chips in water for at least 30 minutes before using them to create a smoky flavor during grilling.
  3. Preheat the grill to medium high heat (about 375°F) and place soaked applewood chips on the hot coals or heat deflector plates.
  4. Cook the brisket pieces on the grill, turning occasionally, until a deep brown crust forms. This should take about 10 minutes.
  5. Cover the grill with a lid and let the brisket cook for an additional 3 4 hours or until it reaches an internal temperature of 200°F. Baste with BBQ sauce every hour to keep it moist and tender.
  6. Remove the brisket from the grill and let it rest for about 15 minutes before slicing against the grain.
  7. Warm corn tortillas on the grill, about 30 seconds per side.
