  • 1 lb beef sirloin, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 3 tbsp vegetable oil
  • 2 tsp salt, divided
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Fresh cilantro leaves, for garnish

Instructions

  1. In a large bowl, combine sliced beef sirloin with red bell pepper, green bell pepper, and yellow onion. Add salt, black pepper, paprika, ground cumin, chili powder, garlic powder, and onion powder. Toss to coat the ingredients evenly. Set aside for 15 minutes.
  2. Preheat an outdoor grill or a grill pan over medium high heat. Brush both sides of each tortilla with vegetable oil and sprinkle one side with salt.
  3. Grill tortillas on the oiled side until lightly charred and crispy, about 1 minute per side. Remove from the grill and set aside.
  4. Grill seasoned beef, bell pepper, and onion mixture over medium high heat, stirring occasionally, until cooked through and slightly charred, about 6 8 minutes.
  5. Assemble quesadillas by placing a portion of cooked meat, vegetables, and cheese onto one half of each grilled tortilla. Fold tortilla in half to enclose the filling.
  6. Return assembled quesadillas to the grill and cook for 2 3 minutes on each side until crispy and golden brown. Slice into wedges before serving. Garnish with fresh cilantro leaves.
