Ingredients

  • 2 cups all
  • purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 1/4 cup sour cream
  • 2 cups farmer's cheese, crumbled (or substitute with ricotta cheese)
  • 1 cup fresh spinach, finely chopped
  • 1 cup cremini mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Freshly ground black pepper, to taste
  • Salt, to taste

Instructions

  1. In a large bowl, combine the flour and salt. Add the cold, cubed butter, and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  2. Stir in the egg and sour cream, then mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. In a pan, heat olive oil over medium heat. Add onions and cook until they become translucent. Add garlic and cook for another minute. Stir in chopped mushrooms, spinach, salt, and pepper to taste. Cook until the vegetables are tender.
  4. Remove the dough from the refrigerator, and on a lightly floured surface, roll it out into a 1/8 inch thick sheet.
  5. Cut the dough into 2 inch squares, then place a heaping teaspoon of vegetable filling in the center of each square. Moisten the edges with water, fold the dough over to form a triangle or semi circle, and press the edges together to seal.
  6. Cook the pierogi in boiling salted water for about 3 minutes, or until they float to the surface. Remove them with a slotted spoon and drain on paper towels.
  7. Serve immediately with your favorite toppings like sour cream, caramelized onions, or sautéed mushrooms.
