  • 2 ears of corn, shucked and cleaned
  • 1/4 cup mayonnaise
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin

  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat a grill or grill pan over medium high heat. In a small bowl, mix together the mayonnaise, smoked paprika, ground cumin, chili powder, salt, and black pepper to create a spice blend.
  2. Brush the corn with a thin layer of the spice blend and place it on the preheated grill or grill pan. Cook for 8 10 minutes, turning occasionally, until the corn is tender and slightly charred.
  3. In another small bowl, mix together the lime juice, sour cream, and half of the chopped cilantro to create the cilantro lime crema. Set aside.
  4. Remove the corn from the grill and brush with a thin layer of the remaining spice blend. Sprinkle the feta cheese evenly over the corn, then dollop the cilantro lime crema on top. Finish with the remaining chopped cilantro.
