Ingredients

  • 8 small corn tortillas
  • 1 lb ground beef
  • 1 small red onion, finely chopped
  • 2 jalapenos, thinly sliced
  • 4 oz shredded cheese (Monterey Jack or Cheddar)
  • 1 avocado, diced
  • 1 lime, cut into wedges
  • Fresh cilantro leaves
  • Salt and pepper, to taste

Instructions

  1. In a large pan, brown the ground beef over medium heat. Season with salt and pepper to taste. Drain any excess fat, then set aside.
  2. In another pan, cook the red onion and jalapenos until softened and slightly charred.
  3. Warm the corn tortillas in a separate pan or directly on a grill for 10 15 seconds per side to create a perfect texture.
  4. Assemble the tacos by layering the seasoned beef, cooked onion and jalapenos, shredded cheese, diced avocado, lime wedges, and cilantro leaves in each tortilla.
