  • 1. 1 lb shrimp, peeled and deveined 2. 3 tbsp olive oil 3. 4 chipotle peppers in adobo sauce 4. 1/4 cup fresh lime juice 5. 1/4 cup cilantro leaves 6. 3 cloves garlic, minced 7. 1 tsp kosher salt 8. 1/2 tsp black pepper 9. 1/2 tsp smoked paprika 10. 8 small corn tortillas 11. 2 cups shredded cabbage and carrots 12. 1/4 cup sour cream 13. 2 tbsp fresh cilantro, chopped

Instructions

  1. In a blender or food processor, combine chipotle peppers, adobo sauce, lime juice, 1/4 cup cilantro, garlic, salt, black pepper, and smoked paprika. Blend until smooth.
  2. In a large bowl, toss shrimp with olive oil, 3/4 of the chipotle lime sauce, and let marinate for 30 minutes.
  3. Preheat grill to medium high heat. Thread shrimp onto skewers and grill until pink and cooked through.
  4. Warm corn tortillas on the grill for 10 seconds on each side.
  5. In a separate bowl, combine slaw ingredients with remaining sauce and toss.
  6. Assemble tacos with marinated shrimp, slaw, and a dollop of sour cream. Top with chopped cilantro.
