Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 large green bell pepper, sliced
  • 1 large red bell pepper, sliced
  • 2 tbsp olive oil
  • 1 package (8 count) flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 3 tbsp taco seasoning mix

Instructions

  1. In a large skillet, heat 1 tbsp of olive oil over medium high heat. Season the beef with salt, pepper, and half of the taco seasoning mix. Cook the beef until browned, then transfer to a plate and set aside.
  2. In the same skillet, add another tablespoon of olive oil and sauté the sliced bell peppers until slightly softened. Season with the remaining taco seasoning mix and set aside.
  3. Preheat your grill or griddle pan to medium high heat. Lightly brush each tortilla with the last tbsp of olive oil and place them on the hot grill or griddle for about 20 seconds per side, until they become slightly crispy. Remove from heat and let cool slightly.
  4. To assemble, place a spoonful of cooked beef on one half of each tortilla, followed by some sautéed bell peppers. Sprinkle with shredded Monterey Jack cheese and a pinch of chopped cilantro. Fold the tortillas in half to create a semi circle shape and press gently to seal the edges.
  5. Return the wrapped tortillas to the grill or griddle for 1 2 minutes per side, until the tortillas are crispy and the cheese is melted. Remove from heat, let rest for a minute, then carefully cut each bomb in half to reveal the delicious filling inside.
  6. Serve immediately with your favorite dipping sauce and enjoy the sizzling, smoky flavors of Fiesta Fajita Bombs at your Tex Mex cookout or tailgate party!
