Ingredients
1. 2 large boneless, skinless chicken breasts 2. 1 cup barbecue sauce 3. 1/4 cup apple cider vinegar 4. 1/4 cup brown sugar 5. 1/2 cup hickory wood chips, soaked in water for 30 minutes 6. 1 large onion, sliced into rings 7. 2 cups shredded coleslaw mix 8. 1/2 cup mayonnaise 9. 1 tbsp apple cider vinegar 10. Salt and pepper, to taste
Instructions
Start by soaking wood chips in water for 30 minutes to prepare the grill. Preheat your grill to medium high heat, around 350°F.
In a bowl, mix together barbecue sauce, apple cider vinegar, and brown sugar. Set aside.
Season chicken breasts with salt and pepper. Place them on the preheated grill and cook for 6 7 minutes per side, or until fully cooked through.
During the last 5 minutes of cooking, add soaked wood chips to the grill and place chicken on indirect heat. Brush with the prepared barbecue sauce mixture, turning and basting the chicken every few minutes. Cook until the desired level of smoke ring and charring is achieved.
Remove the chicken from the grill and let it rest for a few minutes.
In another bowl, mix together shredded coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper to taste. Set aside.
Slice the cooked chicken breasts and serve them alongside the BBQ sauce, onion rings, and coleslaw. Enjoy!
