Ingredients
1 lb boneless chicken breast or beef sirloin, thinly sliced
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 onion, sliced into thin wedges
2 tbsp oil for cooking
8 large flour tortillas
1 cup sour cream
2 cups shredded Monterey Jack cheese
1 cup guacamole
1 lime, cut into wedges
Salt and pepper, to taste
Instructions
In a large bowl, marinate the sliced chicken or beef with salt, pepper, and your favorite fajita seasoning for at least 30 minutes.
Preheat a large grill or non stick skillet over medium high heat.
Add oil to the grill or skillet and cook the marinated meat until golden brown and cooked through. Transfer to a plate and set aside.
In the same pan, add the sliced bell peppers and onions. Cook for 3 4 minutes or until tender crisp. Add the cooked meat back into the pan and toss everything together.
Warm the flour tortillas in a separate pan or oven safe dish for 1 2 minutes.
Assemble your sizzling fajitas: Place a spoonful of the meat mixture onto each tortilla, followed by sour cream, cheese, guacamole, and a squeeze of lime juice. Fold the tortillas into half to create a perfect package.
Serve immediately with a side of freshly made pico de gallo for an extra burst of flavor.
