  • 8 ears of fresh corn, 1/2 cup unsalted butter, 2 tablespoons chipotle peppers in adobo sauce, zest and juice of 2 limes, 1/2 teaspoon ground cumin, salt to taste, 1 cup crumbled cotija cheese, 2 tablespoons finely chopped fresh cilantro, 1 teaspoon smoked paprika, 1/2 teaspoon chili powder, 4 lime wedges.

Instructions

  1. Heat the grill to medium high heat. In a small bowl, combine butter, chipotle peppers, lime zest and juice, cumin, and salt. Spread the mixture evenly onto each ear of corn. Grill the corn for 8 10 minutes, turning occasionally until tender and charred in spots. Combine cotija cheese, cilantro, paprika, and chili powder in a shallow dish. Remove corn from grill and immediately roll in the cotija mixture to coat. Serve with lime wedges on the side.
