Ingredients

  • 4 boneless chicken breasts
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 tablespoon taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. In a large skillet, heat a tablespoon of oil over medium high heat.
  2. Season chicken breasts with half of the taco seasoning, salt, and pepper. Cook for 5 minutes on each side or until golden brown.
  3. Remove the chicken from the skillet and set aside. Add salsa to the skillet, stirring to scrape up any brown bits.
  4. Add black beans, corn, rice, and the remaining taco seasoning, salt, and pepper. Stir well and cook for 5 minutes or until heated through.
  5. Return chicken to the skillet, spooning sauce over it. Cover and cook for 10 15 minutes, until chicken is cooked through.
  6. Remove from heat, sprinkle with shredded cheese, and cover until melted.
  7. Top with green onions and serve immediately!
