  • 3 lbs beef brisket
  • 1/2 cup BBQ rub
  • 2 cups wood chips (hickory or oak)
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup water
  • 1 tbsp Worcestershire sauce
  • 1 tsp liquid smoke
  • 6 hamburger buns
  • Optional: pickles and onion rings

Instructions

  1. In a small bowl, combine the BBQ rub ingredients.
  2. Rub the mixture onto the brisket, making sure it's evenly coated.
  3. Preheat your grill to 350°F (175°C) and add soaked wood chips.
  4. Place the brisket on the grill, fat side up, and cook for 2 hours with the lid closed.
  5. In a saucepan, combine vinegar, brown sugar, ketchup, water, Worcestershire sauce, and liquid smoke. Bring to a boil, then simmer until slightly thickened.
  6. After 2 hours, baste the brisket with the BBQ sauce and continue cooking for another hour or until the internal temperature reaches 205°F (96°C).
  7. Remove the brisket from the grill and let it rest for at least 30 minutes. Slice into bite sized pieces.
  8. Assemble the sandwiches with sliced brisket, additional BBQ sauce, pickles, and onion rings if desired.
