  • 4 large ears of corn, shucked and silks removed 1 cup barbecue sauce, homemade or store
  • bought 2 tablespoons butter, melted 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon smoked paprika 1 jalapeño, minced 1 lime, zested and juiced 1 tablespoon mayonnaise

Instructions

  1. Preheat grill to medium high heat or preheat oven broiler to high.
  2. In a small bowl, combine the barbecue sauce, melted butter, salt, black pepper, smoked paprika, half of the minced jalapeño, and lime juice. Mix well.
  3. Brush each ear of corn with some of the prepared BBQ mixture, ensuring all sides are evenly coated.
  4. Grill or broil corn for 5 6 minutes per side, brushing with additional BBQ sauce and turning occasionally, until tender and slightly charred. Remove from heat.
  5. In another small bowl, combine remaining jalapeño, lime zest, mayonnaise, and a pinch of salt. Mix well.
  6. Allow the grilled corn to rest for 1 minute, then spread the jalapeño lime mayo evenly over each ear of corn. Serve immediately.
