Spicy Grilled Pineapple Bites with Smoky Chipotle Glaze
This delicious and easy-to-make Tex-Mex appetizer features spicy grilled pineapple bites coated in a smoky chipotle glaze. Perfect for your next tailgate or dinner party.
Slice the pineapples into 1/2 inch thick rounds and remove the hard core from each slice.
In a small saucepan, combine brown sugar, honey, apple cider vinegar, chopped chipotle peppers, minced garlic, ground cumin, and salt.
Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the glaze thickens slightly. Remove from heat and let it cool for 5 minutes.
Brush both sides of each pineapple slice with the glaze, making sure to evenly coat them.
Preheat a grill or grill pan to medium high heat.
Grill the pineapple slices for about 2 3 minutes per side, basting occasionally with additional glaze, until they are lightly charred and tender.
Remove from the grill and let them cool slightly before skewering each pineapple slice onto wooden skewers.

To add another dimension to this dish, try sprinkling some crumbled queso fresco or cotija cheese on top of the grilled pineapple bites before serving.
