Instructions

  1. Preheat an outdoor grill to medium high heat or preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the mayonnaise, paprika, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Set aside.
  3. Brush the corn with melted butter, then place it directly on the grill grates or in a preheated oven for 10 12 minutes, turning occasionally, until the kernels are tender and slightly charred.
  4. Remove the corn from the grill or oven and immediately brush it with the prepared seasoning mixture, making sure to coat all sides evenly.
  5. Sprinkle generously with cotija cheese and garnish with chopped cilantro. Serve immediately with lime wedges for a zesty twist.
