Ingredients

  • 2 lbs pork shoulder 1/4 cup kosher salt 1 tbsp ground cumin 1 tbsp paprika 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp oregano 1 tsp black pepper 1/2 tsp cayenne pepper (optional) 4 cups applewood smoked, chopped Corn tortillas 1 recipe Smoky BBQ Slaw (see below) 1 recipe Pickled Onions (see below)

Instructions

  1. In a small bowl, mix together salt, cumin, paprika, garlic powder, onion powder, oregano, black pepper, and cayenne pepper. Rub the spice mixture evenly over the pork shoulder.
  2. Preheat your smoker to 250°F (120°C) and smoke the pork shoulder for 4 5 hours or until it reaches an internal temperature of 195°F (90°C). Wrap the pork in foil, then return to the smoker for another 2 3 hours.
  3. Remove from the smoker, let rest 15 minutes, and then shred using two forks.
  4. In a large skillet, cook the pulled pork with applewood smoked until heated through.
  5. Warm corn tortillas on the grill or in the oven. Assemble tacos by layering pulled pork, Smoky BBQ Slaw, and Pickled Onions.
