  • 6 cloves garlic, minced
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat the grill or grill pan to medium high heat. In a small bowl, mix together the lemon zest, chopped herbs, olive oil, salt, and pepper. Rub this mixture onto both sides of the salmon fillets. Grill the salmon for 4 5 minutes per side or until it flakes easily with a fork. While the salmon is grilling, boil the potatoes in a large pot of water until they are tender. Drain and return them to the pot. Add the butter, heavy cream, garlic, salt, and pepper, and mash until smooth. Stir in the Parmesan cheese and set aside. Serve the grilled salmon alongside the creamy garlic mashed potatoes. Garnish with additional herbs if desired.
