  • 2 cups chopped pineapple
  • 4 tbsp soy sauce

  • 1 tsp minced garlic
  • 8 small corn tortillas

Instructions

  1. In a large bowl, combine the beef with 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of rice vinegar, sesame oil, red pepper flakes, and garlic. Mix well and marinate for at least 30 minutes.
  2. Preheat a grill or griddle to medium high heat. Grill the beef until cooked through, about 5 minutes per side. Set aside.
  3. In a separate pan, cook the pineapple with 1 tablespoon of soy sauce and 1 tablespoon of brown sugar over medium heat for about 5 minutes, or until tender and caramelized.
  4. Warm the corn tortillas on the grill or in the microwave for about 30 seconds.
  5. Assemble tacos by placing a slice of bulgogi beef on each tortilla, followed by a generous spoonful of pineapple, and season with salt and pepper to taste.
