Instructions
In a large bowl, combine barbecue sauce, soy sauce, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until well combined. Set aside.
Pat chicken wings dry with paper towels. In a large resealable plastic bag, add half of the barbecue marinade. Add chicken wings, seal, and shake to coat evenly. Refrigerate for at least 1 hour or up to overnight.
Preheat oven to 400°F (205°C). Grease a large baking sheet with nonstick spray. In a medium bowl, whisk together cornmeal, flour, baking powder, salt, and sugar. In another bowl, combine milk and egg. Slowly add the wet ingredients into the dry, stirring until just combined. Fold in cheddar cheese.
Drop spoonfuls of batter onto the prepared baking sheet, spacing them evenly apart. Bake for 12 15 minutes or until golden brown and set. Remove from oven and let cool slightly.
Heat cooking oil in a deep fryer or heavy pot to 350°F (175°C). Carefully lower chicken wings into the hot oil and cook for about 8 minutes, turning occasionally, until cooked through and golden brown. Drain on paper towels.
Serve wings atop the cornbread with a side of your favorite dipping sauce. Enjoy!
