  • 4 large ripe peaches, pitted and sliced
  • 1 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

  • 1 1/2 cups all
  • purpose flour
  • 1 cup brown sugar, packed
  • 1/2 cup vegan butter, cold and cubed
  • 1/4 cup almond milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine peaches, granulated sugar, cornstarch, 1/2 tsp cinnamon, nutmeg, and salt. Mix well. Set aside.
  3. In another bowl, whisk together flour and remaining 1/2 tsp cinnamon. Add brown sugar and cold cubed vegan butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Gradually add almond milk into the crumb mixture, stirring until it forms a soft dough.
  5. Transfer the peach mixture to a greased 8 inch square baking dish and spread evenly.
  6. Drop spoonfuls of the crumble dough over the peaches and spread it gently with a spatula.
  7. Bake for 40 45 minutes, or until the top is golden brown and the filling is bubbling. Allow to cool slightly before serving.
