Instructions
Prep: Rinse and dry the jalapeños. Carefully slice off the tops of each jalapeño and use a spoon to gently remove the seeds and membranes.
Mix: In a medium bowl, combine the cream cheese, cheddar cheese, bacon, garlic powder, salt, and black pepper until well combined.
Stuff: Spoon the cheese mixture into each jalapeño half, filling it to the brim.
Bread: Set up three bowls one for flour, one for beaten eggs, and one for breadcrumbs. Coat each stuffed jalapeño in flour, then egg, and finally, breadcrumbs.
Fry: In a large skillet, add enough canola oil to reach a depth of 1 inch. Heat the oil to 350°F. Carefully place the breaded jalapeños into the hot oil, frying in batches if necessary. Cook until golden brown and crispy, about 2 3 minutes per side.
Drain: Remove the jalapeños from the oil with a slotted spoon and drain on paper towels to remove excess oil.

To add an extra kick, try adding some diced jalapeño to the cheese mixture. For a smoky twist, incorporate smoked paprika into the cheese mix.
